Catching a Sydney Double Decker on the weekend
I am visiting Sydney on the long weekend ie 30.09.2017-02.10.2017 and will be in the Ryde and City areas. I would like to ride on a new Double Decker. Where would they run from/to...Thanks

If you have an iPhone, download NextThere as that lets you see live bus fleet information on whats running a certain service.
But as for your topic question, I'm not 100% certain and may actually have to disappoint - today, you primarily see the double decker buses on routes to the Hills District (Hillsbus is the operator), and mostly during rush hours. 607X e.g., is a good candidate. Labour Monday will be counted as a public holiday, and as such, the Sunday timetable + roster will operate instead (no rush hours).
I have seen one or two on a weekend as well,but really, its less likely. I actually just checked NextThere for you, and theres a double decker departing QVB, route 607X in a few mins, so indeed, it does all come down to being at the right place at the right time. Download the app if you can!

Hillsbus is not the only operator with Double Deckers - Forest, Busways and Transdev also operate them. But mostly used on weekdays and very few if any in the Ryde or CBD areas.

May be worthwhile giving Hillsbus a call and asking which services are scheduled for the DD on that weekend - (02) 9890 0000 is the number.

CDC deckers are out everyday and you'll generally spot them easily enough (unless you're really unlucky!).

Hillsbus run DD on 607X 7 days a week, from what I’ve caught usually from 6am until 8pm

Eastgardens to Kingsford is a 1-2 section fare.
